Study on stability of whole Walnut Milk Beverage

Abstract The aim of this paper is to determine the parameter of processing technique of whole walnut milk beverage through orthogonal test. The result showed that the optimal formula of the beveerage is determined as follows:walnut4%, sugar6.8% and mixed stabilizers0.35%, and the optimal processing technique is determined as follows: pH 7.3~7.7, homogenizing condition is 35MPa/5~10MPa at 70¡æ. According to the result of emulsion stability by means of centrifuging and measuring cylinder methods, the walnut milk beverage has good stability after 30days preserved at 0~4¡æ, 37¡æ and normal temperature.
